INSTRUCTIONS

  1. 1.Chill a martini glass by placing it in the freezer or filling it with ice water for a few minutes.
  2. 2.In a shaker, combine 100ml of Oroma Carajillo base.
  3. 3.Add 20ml of freshly squeezed lemon juice to the shaker.
  4. 4.Pour 15ml of simple syrup into the mixture.
  5. 5.Crack one egg and separate the egg white, adding it to the shaker (ensure it's fresh).
  6. 6.Secure the shaker lid and perform a dry shake (without ice) vigorously for about 15 seconds to emulsify the egg white.
  7. 7.Add ice cubes to the shaker and shake vigorously for another 15 seconds to chill and dilute.
  8. 8.Strain the mixture into the chilled martini glass, ensuring no ice falls in.
  9. 9.Finish by allowing the foam to settle and form a smooth layer on top.
