INSTRUCTIONS

  1. 1.Chill a coupe glass in the freezer for 15 minutes before use.
  2. 2.In a cocktail shaker, pour 100ml of Oroma Espresso (the base for our drink), ensuring it's freshly opened for a brisk aroma.
  3. 3.Add 30ml of freshly squeezed lemon juice for that signature sour style.
  4. 4.Pour in 20ml of simple syrup, made from equal parts sugar and water, to balance the flavors.
  5. 5.Crack open a large egg and gently separate the white. Add the egg white to the shaker for a silky texture.
  6. 6.Fill the shaker with ice and shake vigorously until the mixture is well chilled, approximately 20 seconds.
  7. 7.Double strain the mixture into the chilled coupe glass using both the shaker strainer and a fine mesh sieve.
  8. 8.Admire the creamy froth settling on top and serve immediately.
