- 6.Add 1 dash of chocolate bitters.
- 7.Crack an egg, separating out the white, and add it into the shaker.
- 8.Dry shake (no ice) vigorously for 10 seconds to emulsify the egg white.
- 9.Add ice to the shaker, then shake again for an additional 10 seconds until chilled.
- 10.Double strain the mixture into the chilled coupe glass.
- 11.Finish with a light dusting of cocoa powder over the foam top.
