INSTRUCTIONS

  1. 1.Chill a martini glass by filling it with ice water and setting aside.
  2. 2.Prepare a brûlée top by placing 20g of granulated sugar in a heatproof bowl and set aside.
  3. 3.Use a cocktail shaker to combine one 100ml can of Oroma Carajillo, 10ml of fresh lemon juice, 10ml of simple syrup, and 10ml of egg white.
  4. 4.Add ice to the shaker and shake vigorously to create a frothy consistency.
  5. 5.Strain the mixture into the chilled martini glass, emptying the ice water before pouring the drink.
  6. 6.Evenly sprinkle the granulated sugar over the surface of the drink.
  7. 7.Use a kitchen torch to carefully caramelize the sugar until a hard brûlée crust forms on top of the cocktail.
  8. 8.Allow the brûlée crust to cool and set for a few seconds before serving.
  9. 9.Garnish with a fresh lemon twist for added zest and aroma.
